Yes, that setting will affect your entire site.
I guess your are using the [tribe_this_week] shortcode. Unfortunately, there is no built in option or shortcode attribute to achieve exactly what you are looking for.
There is a setting available you can enable that will hide weekend days from all Week views by going to wp-admin > Events > Settings > Display tab. Perhaps this serves as a workaround for you.
If you think this is something that could be added as a new functionality to our plugin, you can always suggest it as a new idea in our User voiceΒ so others can vote for it and we’ll take into account when planning for future feature releases.
Let me know if you need help elaborating this idea and I’d be happy to do so.

I’m really sorry the plugin gets stuck.
Having a closer inspection to your debug.log, I can see many fatal errors about reaching the memory limit for your site, so there is a chance this might relate to the backup plugin getting stuck.

Yes, there is a workaround. Using the code in the first article I shared I came up with, I came up with a snippet that will accomplish what you are looking for.
Try placing the following snippet in your theme’s functions.php file and let me know if it works for your recurring events:

Just wanted to share with you that a new maintenance release (for the Week of 2 October 2017) is out, including a tweak in Filter Bar that improves performance by swapping out LEFT JOINs for INNER JOINs in SQL queries.
