I am wondering if you might have a plugin or theme conflict. Begin by deactivating all other plugins, using a theme such as Twenty Seventeen https://wordpress.org/themes/twentyseventeen/, and see if the issue still persists. Also, double check for any other updates available (Dashboard » Updates).
Please let me know if the issue still persists after these tests.

When I scanned your link on https://developers.facebook.com/tools/debug, I wasn’t seeing an image.
Can you send us your System Info? I am wondering if you have another plugin enabled that would tell Facebook what the image should be. Yoast can do this, as can Jetpack.
Do other links from your site create the same issue?

That does seem odd. Are you able to set up a staging server for testing? If not, the next option I’d suggest is to clone your site into a sub-directory and hide it from search engines while testing (Yoast can do this).
I’d start by deactivating all other plugins except The Events Calendars & Events Calendar Pro, plus keeping Yoast on to hide from search. Then see if the plugin continues to deactivate itself.
Do you have other backup solutions running or any hosting management tools (ManageWP, or anything provided by your webhost) that might do this?
I hope we can sort this out soon.

Have you checked out Advanced Post Manager yet? It’s free, and can help you sort the event posts.
If that doesn’t meet your needs, can you share what you want the customized default post list to include? I can’t guarantee that it will fit within our Scope of Support / Terms, but might be able to find a solution that worked for others similarly.

I am not sure what might’ve caused the change in views. Did your theme happen to have an update during that same timeframe? Does this happen on other posts (not events)?

Another solution would be to force the images you already have to fill the width that the page displays in:

My teammate, Cliff, actually responded to the thread you referenced clarifying that this is a known bug.
Google is apparently not handling this properly.
They are likely trimming the time and just displaying the date.
I’ll mark this ticket as Pending Fix, which means this thread should receive a reply once the applicable fix has been released. I cannot guarantee when it will be fixed as it’s in the development team’s hands now. They need to assign it, code it, test it, and schedule it for release.
I apologize for this issue and appreciate your understanding and patience.
Likewise, I’ll flag this thread as an issue for you to be notified about. The only other suggestion I have might be a temporary work around. Rather than setting your timezone by UTC, could you switch to a city in your timezone settings and see if Google knows how to read that?

Unfortunately, we don’t currently integrate an organizer filter in to our shortcodes. If you think that is something you would like as a feature I encourage you to visit our User Voice Page and either upvote an existing request or make a new request there.
You can suggest it it https://tribe.uservoice.com/forums/195723-feature-ideas/suggestions/17482138-create-shortcode-attribute-organizer-for-tribe.
But another solution would be to use WordPress tags. These appear on the right hand side of events/posts. You could use categories based upon each officiant’s name. Then use the shortcode <samp>[tribe_events view=”list” category=”barbecue”]</samp>.
If you’d like that on a widget sized area, rather than a full page, you could use tags instead of categories. [tribe_events_list tags=”rabbi1, rabbi2, speaker3″ category=”tickets-available”]. https://theeventscalendar.com/knowledgebase/pro-widget-shortcodes/ has more filters available. Using a shortcode will display the content in different view options, such as a mini-calendar, a list, etc. It will show the next few events in chronological order from the nearest to the furthest away, omitting any that have passed.
Another detail worth noting is that you can get a link to organizer events. If you see http://wpshindig.com/event/network-ask-advise-discuss-and-learn/2017-07-12/ has an organizer that you can click on, you’ll see that organizer’s events in list view.
The widget will simply be hidden if no data is available.

Our form for event creation is Community Events. However, this doesn’t really sound quite like what you need. It would allow you to have a level of user access to submit an event, edit their own events, and delete their own events. You can test that out at http://wpshindig.com/events/community/add. Otherwise, you may want to create a WP Admin Dashboard level of user access for the employee access. They don’t have to be full admins, but might need a bit more control than Community Events can offer.
