Thanks for the email and sorry are having issues. The contributor role should be able to see the entire list of attendees for an event. So once your contributor logs in, can you send a screen shot of what they see?

One thing I can suggest is for you to manually alter the total_sales custom field in the WooCommerce Product Page that is associated with the ticket. This will update what you see on attendees and should help to properly increase your stock. You can also manually increase the stock on the Edit Event page, where you edit your ticket.
In terms of manually setting each order to Complete, in order for tickets to process, that is expected behavior. Here is our article on managing order with tickets for your reference:

Log in directly to your account and then click on the shopping cart icon on the top right. Make sure nothing is in your cart. If there is something, just delete it. Then go back to My Account > License Keys and click the renew button for your product. This will add the product new in the cart and then you should be able to renew it. Let me know if you have any issues with all of that.

Thanks for the email! Yes, with the Events Tickets Plus you can sell tickets which uses WooCommerce. In WooCommerce, you will be able to select PayPal as the method of payment.
