There has been no update to Event Tickets Plus since I reported this issue.

I ended up adding the “Post Types Order” plugin and using that to sort the Download post type for the tickets.

The knowledgebase article for Making Tickets (https://theeventscalendar.com/knowledgebase/making-tickets/) describes leaving stock blank for unlimited tickets.

For now I have set a large stock quantity and hidden the available stock remaining display.
