ParticipantI was directed to post hre by the support team, so hopefully this is the correct place,
I am current running the pro plugin at https://www.gastronomicslc.com/events/
What I am trying to achieve is to have individual event pages display as regular blog pages, eg if you browse the site you will see posts have a side bar element. However when I select ‘blog’ from the event templates, while the event pages look great, the overview/listings page then breaks. How can I solve this?

If I’m understanding your question correctly, you’re referring to the Events Template setting at wp-admin > Events > Settings > Display tab
And you’re wanting to change it from Default Events Template to Default Page Template…
I visited both https://www.gastronomicslc.com/event/peruvian-festival-2017/2017-07-28/ (an event) and https://www.gastronomicslc.com/2017/07/27/menu-watch-july-2017/ (a blog post) and they looked very similar other than the event not having the sidebar.
I can’t advise you on the Default Page Template, as it’s different per theme. However, you might find our Calendar Widget Areas extension helpful.

This is by selecting the ‘blog’ option from events templates. My goal here is that individual event pages show the same right and side bar as the rest of the site. Presently this breaks the main listing functionality.

I see you’re using a Genesis child theme. I’d recommend referencing https://theeventscalendar.com/knowledgebase/genesis-theme-framework-integration/ (note that some of it may be outdated but it might still prove helpful).
