Can you update all of your Events Calendar related plugins to their most recent versions, as a first step?
After doing so, can you create a new test ticket scenario where you delete an attendee and see if it works as expected?

Okay so I have updated all of the plugins, created a test, added a few attendees and deleted them. All is exactly as expected and it works perfectly so that’s great news! Thank you!
However, there are many past courses with this error which haven’t seemed to have been corrected. I really don’t want to recreate these as there are already many bookings on them and there are far too many courses with this error to go through and remake… 🙁

I’m glad to hear that everything is working as expected now!
As far as your previous events go, unfortunately the only want to correct the events would be to recreate them. You can try duplicating the events with the help of a third-party plugin like Duplicate Post, and then moving the tickets via the following tutorial:

Before doing any of this, I’d also recommend creating a backup of your site, just in case.

What would likely happen to the attendees already booked onto these courses?Would I need to mark the current event as hidden from listings, and create a duplicate of this course open to the remaining amount of spaces per event? That seems like the only way to get this working to me…Sorry clicked on the link you sent which explains moving attendees from one ticket to another. I will give it a go and hopefully this resolves my issues. 🙂
