– Is there a way for admins to keep track of who and when made rspv’s on events?
– Is there a way for users to see what events they applied for (rspv)I have a school site where people attend to classes so having a history of attendings would be great.

Yes there is, as all the information is stored in the Database as tribe_rsvp_attendees posts (including timestamp and author).
Most of that information is also available when an admin clicks on “Attendees” while hovering over the eventsYou might also be interested in receiving emails for each reservation by using and configuring the following plugin: https://wordpress.org/plugins/bnfw/
– Is there a way for users to see what events they applied for (rspv)
Unfortunately, not currently.
That being said, you could probably achieve that through template customization.
You might want to read our Themer’s guide to get a sense of how that works.As an alternative, you could also hire one of our recommended customizers to do the customization for you.

I have another question though:If a user is already logged in into the site, I don’t need the ‘rspv’ to ask for email and name. Can the plugin use the existing user details?

That’s a great question.
Currently there is no built-in way for that. But I am pretty sure that this could be achieved with some customizations and/or usage of third-party plugins.The good news is that this looks a lot like the following feature request: https://tribe.uservoice.com/forums/195723-feature-ideas/suggestions/10949349-allow-users-to-rsvp-to-community-events
