With the Events Calendar Pro, will I be able to list the events in a widget with the day of the week icon to the left and the content to the right without the mini calendar at the top?

Thanks for the interest in Pro.

Indeed the Pro Event List Widget can show events as you describe without the Mini Calendar.

There is also a shortcode to display them as well like that.
