I need to make the events calendar UK specific. My prefered way would be to remove all other countries and add UK counties instead of US states.
Quite happy with coding or Database editing. Just need to know where to start.

One approach could be to visit Events > Settings > Defaults and specify a custom list of countries. This might simply be the United Kingdom, or if you were feeling creative you could try making this a list of actual counties (rather than actual countries) then change the labeling of those fields where they are exposed to the public.

sorry, I should be more specific. In The UK we call ‘States’ , counties (no R) , So I would be looking for the equivolant of US States under the UK Country selection.
Eg
United Kingdom
-England
–Avon
–..
–London
— etc
-Scotland
–Aberdeenshire
–Argyll

MemberMaking the list of states filterable is a good idea, however currently it is hardcoded to US states and in many places where it is used it cannot be filtered, unfortunately (you could certainly propose a change though).
Would an additional field, populated with UK regions, be of use instead?

MemberRight. It’s actually defined as a PHP array (within TribeEventsViewHelpers::loadStates()) – but between the custom country list (which you can use to reduce the available nations to just one) and an additional field you might get close to achieving your aims here.
