ParticipantI have several events that are showing incorrect ticket counts. For example I have set the capacity at 7. I only have two orders, but the Available tickets are showing as 4 (with an error message saying it may not be correct and may need adjusting).

Try correcting the situation based on the error message you get when you hover over the exclamation mark. I believe you will need to manually adjust the stock of the WooCommerce product part of the ticket(s).
Once that is done please still check if you are still having miscalculations.

I have manually adjusted the stock level to what it should be. However, I don’t want to have to do that on a regular basis, I need the system to track that for me. There are several products that are out of sync with what is being ordered. Also, even after I manually adjust the stock level, the Event details tells me that I have 3 tickets sold, but only shows 2.

I see you have a plugin to help duplicate things. Please note, if you duplicate events, then even though the tickets will not be duplicated, there is some stock data that is liked to the event. So if you duplicate an event that already had some sales, then the duplicate will likely show you wrong stock information.
Could this be the case you are having?
Or does this also happen on freshly created events and tickets?
Please also note that moving tickets to a different event will not automatically modify stock information. You can find more details on that in this article: https://theeventscalendar.com/knowledgebase/moving-tickets/
