As per your specific question, normally removing one date has to be done by using exclusions: https://theeventscalendar.com/knowledgebase/pro-recurring-events/
You are right. Attempting to simply delete the undesired events is bound to create all sorts of havoc (mostly breaking the series and the URLs in the process).
