A client is wanting to achieve the following.
Create 1 event e.g. Summer Holiday Activities
The activities will be available on specific days of the week e.g. Mon – Wed – Fri
There will be 3 sessions each day (10:30-11:30, 11:30-12:30, 13:00-14:00)
Ideally they want users to go to the summer holiday activities event, select a day and session and purchase a ticket (£3 per ticket)
Each session will be limited to 20 tickets and should someone buy more than 2 tickets for a session it would be discounted to £2.50 per ticket.
Can the above be achieved using Event Ticket Plus

I think the best way to accomplish this would be to set up different tickets on each event (day) to represent the different sessions for that event. You could then set an individual stock cap on each of the tickets so that no more than 20 could be sold.
Regarding discounting the tickets based on quantity, this could be achieved on the WooCommerce side of things – this post has some great suggestions on how to do it. Please let me know if you have any questions!

Would I still have to create an individual event on each day though? The client wanted to avoid having create a specific event for each day. Ideally they wanted to create one event type and specific the days and available time slots.

Using Event Tickets Plus, you would need to create separate events for events that span non-consecutive days (M-W-F). To create one event that repeats on multiple days, you could use the recurring events feature of Events Calendar Pro. However, tickets added to recurring events are the same on all events in the series. So, if you went this route, you would need to create a separate ticket for each time slot on each day, and you could set a cap on the number available for each ticket. All of the tickets (for all of the days in the series) would appear on each event in the series.
If you did create a separate event for each day, you would then need to add a separate ticket for each time slot that day, and you could also set a cap on the number of available tickets doing it this way.

Thank you for the above comment. Sorry for the delay in getting back to you.
What you have suggested makes sense. So to confirm I can create a single event on the following days (as an example)
Sept 5th, 6th, 7th, 12th, 13th and 14th
And then I would create 3 ticket types session 1 (10.30 – 11.30), session 2 (11.30 – 12:30), session 3 (13:30 – 14:30)
The above ticket types would be visible on all the days listed.

That’s correct! In your example, you would create a separate event for each of the six days, and then on each event, create the three ticket types for each of the sessions. This way, you will be able to set individual caps on the number of tickets available for each session.
