Give Admin a notification when user modifies his ticket /event/name/ticket

Is it possible to get notified when a user who bought a ticket modifies his ticket over at domain.com/event/event-name/ticket

At this page users who bought a ticket for that specific event can modify their Ticket Fields and I would like to be notified on what these changes are.

At this time, it is not currently a feature available in the plugins. A few avenues would be to visit our uUserVoice Feature Ideas and suggest your recommendation there. Another route would be to hire a reputable developer to help further assist.
