Is it possible to merge my current list of events (using the wordpress default events feature) with the events calendar? Or do I need to re-enter all of the events i’ve already put into the WP default events feature?

There is no default events feature within WordPress, so can you clarify where your existing events are coming from?
That will determine if what you describe is possible or not.

GuestIt looks like we’re using custom post types to create our events currently and then use Simple Page Ordering to rearrange them in order by date.

You could try exporting your events into a CSV file—Google this and how to export post types in this format if you’re not familiar.
Then, you could use The Events Calendar built-in CSV importer to import that CSV file.
This is the best option, but may still not work completely correctly for all of the event data of each event. The order of events, for example, is something that is likely to not kept fully intact in a migration.

Is it possible to not have The Events Calendar live until we enter all of the calendar information. We’d like to keep our current events calendar up until we populate the events calendar.Thank you,

It’s unfortunately rather difficult to pull of the sort of separation of events content that you describe here, but one option that might be helpful is to use a “Maintenance Mode” plugin that lets you limit access to parts of your site while you build out those parts.
Our plugins do not provide these features, unfortunately, but you can search for “Maintenance Mode” plugins online to find a free one that works well for your needs.
