Good question. Yes, you can certainly manage the categories that are displayed in the Community Events submission form. I will note that it’s not on a one-to-one basis, but it will show all available categories, which you can then add or remove from the WordPress admin.
Venue fields are a little different. It will display all fields by default. If you want to hide certain fields, you may consider doing that through CSS. If you want to add custom fields, that’s something we don’t offer right out of the box, though I’m sure it would be possible with some custom development.
