Autocomplete all ticket sales except for specific categories

Hello,

My client would like to autocomplete all of their ticket sales as each order is placed. However, they would like to omit specific tickets from this. Would it be possible to create a product category that the omitted products could be assigned to, and then WooCommerce could be set to autocomplete every order except where the ticket is in the omitted category?

In addition, the client would like to omit all physical products from this.

Is any of this possible?
