Add New Event, start date defaults to current date

When a new event is added the event start date saves the current date instead of the selected date, so if I was to select Aug 9th for the start date and submit the event, in the admin for pending it will show the date as the date of the day when the event was submitted.

When I switch themes from the custom theme to the 2016 theme the event submits with the proper date. I understand this signals there is a theme conflict. I also realize this is out of the scope for your plugin support. However I was hoping that just maybe you would take a minute to review and perhaps point me in a direction or two to start trouble shooting this issue. have you heard of this issue before?

Any light that you may be able to shed on this dilemma would be greatly appreciated.
