Ok! Found the solution inside the theme itself.
For anyone using the Salient Theme the change on the excerpt of the events can be made directly inside the theme options (blog) section.

Hey!

I’ve tried the function and it doesn’t work, but thats maybe theme related.
Going for the other approach.

I would change which file exactly?
Its not the content inside the post, aka single-event.php that i want to change is the main page where all the events are listed. The view that i picked as default os photo view.

The general.php file has no
<?php echo tribe_events_get_the_excerpt(); ?>
to be replaced by the other previous stated solution.
