Would you mind modifying your date format to month/day/year format temporarily and see if that resolves the issue when creating recurring events?
It sounds like you should be able to upgrade to version 3.12 of our plugin now and switch your date settings back to your preferred format. There was a bug around different date formats in the last release that was addressed in 3.12.
